Putting Up Cucumbers, Beans and Cabbage After the Fourth
Salt, brine strength, acidity and what makes a jar safe to keep when you put up cucumbers, beans and cabbage after the Fourth of July in York County.
A jar is safe to keep when its contents are acid enough, salty enough and processed long enough that spoilage organisms cannot grow. For cucumbers, green beans and cabbage put up after the Fourth, that means a brine measured by weight or a tested vinegar ratio, a fermentation kept under its own liquid, and a finished acidity at or below pH 4.6. Everything else, the crock, the weights, the cellar shelf, is in service of those three numbers.
What salt and brine strength actually do
Salt does two jobs in a fermenting crock. It pulls water out of the vegetable tissue, which makes the brine that covers the crop, and it slows the bacteria you do not want while leaving the ones you do want, the lactic acid bacteria, free to work. Too little salt and the wrong organisms take over before the acid builds. Too much and the lactic acid bacteria stall.
For a dry salted cabbage, the common range is two to three percent salt by weight of the shredded cabbage. Weigh the cabbage, then weigh the salt. A head that yields two pounds of shreds takes roughly one to one and a half ounces of salt, which is about two to three tablespoons of coarse non-iodized salt, but the scale is the honest measure. Iodized salt and salt with anti-caking agents can cloud a brine and, in some reports, slow the ferment.
For a covered brine on cucumbers or beans, the range most often published is five to ten percent salt by weight of the water, not of the vegetable. That is a brine made by dissolving salt in water first, then pouring it over the packed jars or crock. A ten percent brine, about six ounces of salt to a gallon of water, is on the strong side and is used when the weather is hot and the crop is coming in faster than you can process it. A five percent brine, about three ounces to the gallon, is the milder end.
A manual that collects these ratios from published documents, brining and fermenting vegetables, is useful here because it separates what a source actually says from what gets repeated. The point is not to pick a favorite number but to know which number you are using and why.
Ferment or vinegar: which one are you making?
These are two different products and they are not interchangeable in the jar.
A fermented pickle or sauerkraut gets its acid from bacteria converting sugars in the vegetable. The acid builds over days or weeks. The jar is kept at cellar temperature, roughly sixty-five to seventy degrees Fahrenheit, and the brine is allowed to bubble. When the ferment tastes right, it goes into the refrigerator or a cold cellar, where the acid and the salt hold it.
A fresh pack or vinegar pickle gets its acid from vinegar added at the start. The vinegar is diluted to a tested ratio, usually half vinegar and half water for a standard five percent acidity vinegar, and the jar is processed in a boiling water bath. There is no fermentation window. The jar is either processed correctly or it is not.
Mixing the two methods is where trouble starts. A fermented cucumber that is then sealed in a boiling water bath without enough added acid can lose its texture and still not reach a safe acidity. A vinegar pickle left on the counter to ferment has no live culture to do the work and will simply spoil.
How long does a ferment take in July and August?
In a York County July, a crock of cucumbers on a back porch can go from fresh to sour in four to seven days. Cabbage for sauerkraut is slower, often two to four weeks, because the shreds are denser and the sugar is released more gradually. Green beans in brine are usually ready in one to two weeks.
Heat speeds everything up, including the wrong things. Above about seventy-five degrees, a crock can go soft and slimy before it goes sour. Below about sixty degrees, the ferment may stall and sit without building acid, which is its own risk. The practical answer is to taste daily after the third day and to move the crock to a cooler spot if it is moving faster than you want.
A few signs are normal: a white film on the surface, called kahm yeast, bubbles, a sour smell, and a cloudy brine. A few signs are not: fuzzy mold in colors, a pink or black slime, a rotten or fecal smell, or a slick, soft texture throughout the jar. When in doubt, throw it out. The cost of a jar is small.
What makes a jar safe to keep?
The single number that matters most is acidity. The line used by food safety agencies is pH 4.6. Below that, the bacterium that causes botulism cannot grow. Above it, in an anaerobic jar, it can.
For fermented vegetables, the acid comes from the ferment itself, and a finished sauerkraut or sour pickle usually lands between pH 3.3 and pH 4.0. That is comfortably safe. For vinegar pickles, the acid comes from the vinegar, and the tested recipes are built so the finished jar lands below pH 4.6 as well.
Salt is the second control. A brine at five percent or stronger, by weight of the water, holds back a wide range of spoilage organisms even before the acid builds. A brine at two percent does not, which is why low salt ferments need to be kept cold and watched closely.
Temperature is the third. A jar that fermented at seventy degrees and then went into a refrigerator at thirty-eight degrees will hold for months. A jar that fermented at eighty degrees and then sat on a shelf at seventy-five degrees will not.
Which vegetables are worth putting up, and which are not
Cucumbers, cabbage and green beans are the three that come in heaviest after the Fourth in this part of Pennsylvania, and all three ferment well. Cucumbers for sour pickles want a firm, unwaxed variety, picked small and used within a day or two. Cabbage for sauerkraut wants a tight head, shredded fine and salted by weight. Green beans want to be topped and tailed, packed upright in a jar, and covered with brine.
Beets, peppers, carrots and asparagus also ferment, though each has its own quirks. Beets bleed and need a strong brine. Peppers can go soft quickly. Carrots and asparagus hold up well but are usually done in smaller batches. Cauliflower and green tomatoes are often pickled in vinegar rather than fermented, because their texture is less forgiving. Pearl onions are almost always a vinegar pickle. Kimchi is a refrigerated ferment with its own method and its own salt ratio, usually a wet brine on the cabbage before the paste is added.
Some vegetables simply do not have a reliable published method for home brining, and a good manual will say so rather than invent one. That honesty is worth more than a recipe.
The harvest calendar and the jar you keep
The Fourth of July is roughly the midpoint of the cucumber season in York County, the start of the cabbage run, and the first heavy picking of green beans. What comes in after that date is what goes into the crock.
A workable order for the weeks after the Fourth: cucumbers first, because they are the most perishable and the most sensitive to heat. Green beans next, packed in brine and left to sour. Cabbage last, in the largest batch, because it keeps longest in the field and ferments slowest in the crock.
When a ferment is done to your taste, move it to jars, cover it with its own brine, and refrigerate. A fermented cucumber will hold its texture for two to three months in the refrigerator. Sauerkraut will hold for six months or more in a cold cellar. A vinegar pickle that has been water bath processed will hold for a year on a shelf.
Write the date on the lid. Write the salt ratio on the lid too. In February, when you open the jar, the number on the lid is the only record of what you did, and it is the only way to repeat it or to correct it.
